The Chedi El Gouna is looking for a Sous Chef responsible for the direct subordinated employees as Chefs de Partie, Demi chefs de Partie, Commis de cuisine, and trainees.
Key Responsibilities
Has a very good knowledge of all different posts in the kitchen, so the substitution of every Chef de partie or even Head Chef is possible.
Assists, supervises, and controls the events, the production in general, and the à la carte production.
Prepares every course as well as the mise en place at all posts.
Ensures the quality of the prepared courses.
Responsible for the preparation of the market list.
Responsible for the daily store order.
Responsible for cost-conscious acting at all posts.
Daily control of the cold-storage houses and refrigerators.
Allocates the individual tasks to the Chef de parties.
Clears and takes care of the equipment at all posts.
Responsible for subordinate employees, especially trainees and apprentices.
Implements training for subordinate employees, trainees, and apprentices.
Conducts regular departmental meetings and daily briefings.
Substitutes the Head Chef in absence.
Qualifications
High school/College graduate.
Up to six years in the kitchen of a five-star hotel in a similar capacity.
Fluent in English (any other language is an additional benefit).
